Mahvelous Millet Loaf
This recipe was taken from Vegan Vittles cookbook (page 171) . When I take this to work for lunch people always ask me what millet is. I, like omnivores, had never heard of Millet until I became a vegetarian. Now I use it quite often. I might be crazy but the taste of this reminds me of chicken noodle soup. I’ve been a vegetarian for 10 years but I still remember what it tastes like. I like the fact that you cook everything in a big soup pot and once cooked you pack it in a loaf pan to set. No need to cook further. It falls apart a little but not too bad.
