Momma Veg here… This is one of our favorite dishes taken from Alicia Silverstone’s cookbook “The Kind Diet”. It is the Warm Potato, Soybean, & Cucumber Salad on page 178. (Originally in Christina Cooks – Christina Pirello) We had never tried Umeboshi Plum Vinegar before and were hesitant to buy it. We were pleasantly surprised. It has a good flavor and we have now used it in other dressings and sauces. Considering the fact that “Earthy” daughter use to hate cucumbers before becoming vegetarian it is nice to find a recipe that she likes. Eating vegan and mostly whole foods is teaching us both to branch out a bit and try new things. On occasion I meet “Earthy” for lunch so I decided to make this and take it to her with some tea and strawberries.
