We love mushrooms and the smell of mushrooms cooking always makes us happy. We made this dish for the first time a couple of years ago. To be honest I wasn’t sure we would like it. It is a nice creamy mushroom chickpea stew. (Pictured here with a few shredded beets on top, sliced mushrooms, sweet potatoes, and a few grapes for dessert.)
That looks fabulously creamy. I wish the rest of my family would eat mushrooms!
