Momma Veg's Eggplant and Roasted Pepper Sandwich
1 Eggplant
1 jarred roasted pepper
Sliced onions
Balsamic Vinegar
Dried Italian Seasonings
Dried crushed Rosemary
Cut eggplant about ¼ inch thick. Sautee eggplant, roasted pepper, and onions in balsamic vinegar. While cooking sprinkle with Italian seasoning and rosemary. To make sandwich layer veggies adding tomato, lettuce and choice of condiment if needed. Served here with baked french fries.
