Vegan MoFo - Artichoke filled Portofolio Mushroom


Marinate portobello mushroom slightly in balsamic vinegar, mix canned artichokes with a small amount of lemon juice then fill the mushroom. Bake about 20 minutes at a temp of 350. Serve with choice of side. Since the oven was on we decided to bake some french fries and serve with tomatoes and a few cherries for dessert.
