MoFo - Edamame & Fruit Salad




Here is one of Momma Veg’s salad creations. It is so good.
Edamame & Fruit Salad

2 cups shelled edamame, defrost & cooked
½ cup shredded beets
½ cup shredded yellow squash
¾ cup diced red bell pepper
½ cup chopped red grapes
½ cup diced peaches
½ white miso dressing, listed below

Combine all ingredients.
Toss thoroughly.

Miso Dressing (source: Skinny Bitch cookbook)
1 teaspoon fresh ginger
1 garlic clove, minced
2 tablespoons white miso paste
1/2 tablespoon agave nectar
2 teaspoons embosh plum vingear
1 teaspoon soy sauce

Combine all ingredients.
Mix thoroughly.
Ready to add to Salad above.

Suggestion:  Go to a Salad Bar a few days before you make the Salad and get the ½ cup of red grapes and shredded beets and shredded yellow squash.  It makes it so much easier.
